In double boiler cook head of cauliflower until it is still firm, then mash with potato masher or fork, add fresh chives/sautéed onion/garlic/rosemary or whatever herbs you like and olive oil. Infused oils are quicker and easier adding lots of flavour. My favorites are Herbes de Provence, Tuscan Herb and Garlic. Then use an immersion blender to whip into a fake mashed potato.
